Chicken (cut into small strips/pieces)
Mashed Potato Powder
Salt and Pepper
(Chilli Flakes/other spices optional)
Cut the chicken into small strips or pieces.
In one bowl, mix in the mashed potato powder and add the salt and pepper and spices to season. This will be the coating of your chicken, so if you only have a small amount of chicken, you won't need a whole packet of mash powder!
In another bowl, beat the egg.
Dip the chicken into the beaten egg, make sure it's covered, and then dip into the bowl with the mashed potato/spices mixture. Make sure the whole piece of chicken is coated.
Once the pieces of chicken have all been coated, put a small bit of oil into a frying pan and heat. (I always use the spray oils such as Frylight etc rather than oil you need to pour in.)
Fry the chicken pieces in the frying pan - keep the pieces moving if you can, to avoid the coating burning.
Fry until a golden brown colour (though cut one of the larger pieces in half to check that the middle is cooked through.)
